Banana Ice Cream

(Makes 1 Generous Quart)

This is a great and delicious way to use up overripe bananas. It's especially tasty when combined with peanut butter or chocolate chips.

1 cup whole milk, chilled
3/4 cup sugar
2 cups heavy whipping cream, chilled
2 very ripe bananas
2 tablespoons freshly squeezed lemon juice


1. Whisk sugar into milk until completely dissolved.

2. Add the cream. Freeze according to manufacturer's directions.

3. While mixture is freezing, mash bananas and lemon juice in a separate bowl with a fork or a potato masher until smooth.


4. Add bananas during last five minutes of freezing. If a firmer consistency is desired, transfer to an airtight container and ripen in freezer for two or more hours.
